Instructions
- Season the Chicken: Coat each chicken breast liberally with Cajun seasoning.
- Sear the Chicken: In a skillet over medium-high heat, drizzle olive oil. Cook the chicken for about 6-7 minutes on each side until golden brown.
- Cook the Sweet Potatoes: In the same skillet, toss in diced sweet potatoes. Season with salt and pepper, sauté for approximately 10 minutes.
- Create the Cream Sauce: Pour in chicken broth and heavy cream, adding garlic and onion powder. Simmer for 3-4 minutes until thickened.
- Bring it Together: Return the chicken to the skillet, sprinkle with Parmesan cheese, and cover until melted (about 2-3 minutes).
- Garnish and Serve: Finish with fresh parsley and serve hot.
