Description

A warm and comforting soup filled with savory ground meat, fresh vegetables, and aromatic spices, reminiscent of your favorite take-out.


Ingredients

  • 1 pound Ground Pork (or ground chicken/turkey)
  • 4 cloves Garlic (minced)
  • 2 tablespoons Fresh Ginger (grated)
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Sesame Oil
  • 1 medium Yellow Onion (diced)
  • 6 cups Chicken Broth (low sodium)
  • 1 cup Shredded Carrots
  • 4 cups Green Cabbage (thinly sliced)
  • 1/2 cup Green Onions (chopped)
  • 1 tablespoon Rice Vinegar
  • Salt and Pepper (to taste)
  • 2 Beaten Eggs (optional)
  • Red Pepper Flakes or Sriracha (optional)

Instructions

  1. Heat sesame oil in a large pot over medium heat. Add diced onion and minced garlic, cooking until fragrant and translucent for about 3-4 minutes.
  2. Add ground pork (or chosen meat) to the pot, breaking it apart and browning until fully cooked, about 5-7 minutes.
  3. Stir in grated ginger and soy sauce, letting flavors meld for another minute.
  4. Pour in chicken broth and bring to a gentle boil.
  5. Lower heat, add shredded carrots and sliced cabbage, cooking for 5-7 minutes until veggies soften but retain crunch.
  6. Toss in chopped green onions, rice vinegar, and season with salt and pepper. Stir in beaten eggs if desired.
  7. Ladle soup into bowls and garnish with reserved green onions and optional red pepper flakes or Sriracha.

Notes

Prepare the base in advance and store in the refrigerator. Reheat and add final touches before serving.
