Ingredients

- 1 cup cottage cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup chopped bell peppers
- 1/2 cup sliced mushrooms
- 1/2 cup chopped spinach or kale
- 1 cup marinara sauce
- Olive oil, salt, and black pepper to taste
- Sliced olives, diced onions, fresh basil (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Spread the cottage cheese evenly across the bottom of a medium baking dish.
- Spoon a generous layer of marinara sauce over the cottage cheese.
- Arrange the chopped bell peppers, mushrooms, and spinach or kale evenly over the sauce.
- Sprinkle shredded mozzarella cheese on top.
- Drizzle olive oil and sprinkle salt and pepper over everything.
- Bake for 20-25 minutes until the cheese is melted and bubbly.
- Remove from the oven, let cool slightly, and garnish with fresh basil before serving.
