Ingredients

- 1/2 tsp baking soda

- 1 tsp vanilla extract

- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the flour, baking soda, and salt in a medium bowl.
- Cream together the softened butter and sugar until fluffy (about 3 to 5 minutes).
- Beat in the egg and vanilla extract until fully incorporated.
- Gradually add the dry ingredients to the wet mixture and stir gently until a soft dough forms.
- Dust your work surface with flour and roll out the dough to about 1/8 inch thick.
- Cut out circles using a cookie cutter or the rim of a glass.
- Place a spoonful of filling in the center of each circle and fold dough over to seal.
- Bake on a lightly greased baking sheet for 12-15 minutes until golden.
- Dust with powdered sugar before serving.
