Description

A tropical dessert that combines creamy coconut and sweet pineapple for a refreshing treat.


Ingredients

  • 1 cup coconut milk
  • 1 cup pineapple juice
  • 1/4 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Pineapple chunks for garnish
  • Coconut flakes for garnish

Instructions

  1. Combine the coconut milk, pineapple juice, sugar, cornstarch, and salt in a medium saucepan. Whisk until smooth.
  2. Place the saucepan over medium heat and stir constantly until the mixture thickens and reaches a gentle boil.
  3. Remove from heat and stir in the vanilla extract.
  4. Pour the pudding into prepared serving dishes and refrigerate for at least 2 hours.
  5. Garnish with pineapple chunks and coconut flakes before serving.
