Instructions
- Combine the coconut milk, pineapple juice, sugar, cornstarch, and salt in a medium saucepan. Whisk until smooth.
- Place the saucepan over medium heat and stir constantly until the mixture thickens and reaches a gentle boil.
- Remove from heat and stir in the vanilla extract.
- Pour the pudding into prepared serving dishes and refrigerate for at least 2 hours.
- Garnish with pineapple chunks and coconut flakes before serving.
