Description

A sumptuous dish featuring salmon fillets bathed in a creamy sauce with sun-dried tomatoes and wilted spinach, perfect for special occasions or cozy dinner nights.


Ingredients

  • 4 Salmon fillets
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 1/2 cup Sun-dried tomatoes
  • 1 cup Heavy cream
  • 1/2 cup Parmesan cheese, freshly grated
  • 2 cups Spinach, fresh
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a nonstick skillet over medium heat until shimmering.
  2. Season the salmon fillets with salt and pepper.
  3. Place the salmon in the skillet, skin-side down, and sear for 4-5 minutes on each side until golden and cooked through.
  4. Remove the salmon from the pan and set aside on a plate.
  5. Add minced garlic and sun-dried tomatoes to the skillet, cooking for 1-2 minutes until fragrant.
  6. Pour in the heavy cream, stirring to combine, and simmer for 2-3 minutes until slightly thickened.
  7. Toss in the Parmesan cheese and spinach, stirring until the cheese melts and the spinach wilts.
  8. Return the salmon to the skillet, spooning the sauce over the top and allowing it to warm for an additional 2-3 minutes.
  9. Serve warm with the sauce.

Notes
