- 4 Salmon fillets
- 2 tablespoons Olive oil
- 2 cloves Garlic, minced
- 1/2 cup Sun-dried tomatoes
- 1 cup Heavy cream
- 1/2 cup Parmesan cheese, freshly grated
- 2 cups Spinach, fresh
- Salt and pepper to taste
Instructions
- Heat olive oil in a nonstick skillet over medium heat until shimmering.
- Season the salmon fillets with salt and pepper.
- Place the salmon in the skillet, skin-side down, and sear for 4-5 minutes on each side until golden and cooked through.
- Remove the salmon from the pan and set aside on a plate.
- Add minced garlic and sun-dried tomatoes to the skillet, cooking for 1-2 minutes until fragrant.
- Pour in the heavy cream, stirring to combine, and simmer for 2-3 minutes until slightly thickened.
- Toss in the Parmesan cheese and spinach, stirring until the cheese melts and the spinach wilts.
- Return the salmon to the skillet, spooning the sauce over the top and allowing it to warm for an additional 2-3 minutes.
- Serve warm with the sauce.
Notes
