Description
Tender chicken thighs marinated in a smoky chipotle honey sauce served over creamy smoked Gouda mashed potatoes.

- 4 chicken thighs, bone-in, skin-on
- 1/2 cup chipotle honey sauce
- 2 cups potatoes, peeled and diced
- 1/2 cup smoked Gouda cheese, shredded
- 1/4 cup milk
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Marinate the chicken thighs in chipotle honey sauce for at least 30 minutes.
- Place marinated chicken thighs in a baking dish and bake for 25-30 minutes until caramelized.
- Boil potatoes in salted water until tender.
- Drain potatoes, return to the pot, and add butter, milk, and smoked Gouda cheese. Mash until smooth.
- Season mashed potatoes with salt and pepper to taste.
- Serve chicken thighs over mashed potatoes, drizzling with remaining chipotle honey sauce.
Notes
For deeper flavor, marinate the chicken overnight. You can also use an air fryer for crispier skin.
