Description

A comforting dish featuring tender chicken, creamy mashed potatoes, and rich gravy, perfect for family gatherings or cozy weeknight dinners.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 4 cups mashed potatoes (store-bought or homemade)
  • 1 cup corn kernels (canned or frozen)
  • 1 cup shredded cheddar cheese
  • 1 cup prepared gravy (chicken or brown)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. In a medium bowl, combine the chicken pieces with garlic powder, onion powder, paprika, salt, and pepper. Mix until well-coated.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and brown for 7-9 minutes. Once cooked, keep it warm and set aside.
  3. In a medium saucepan, gently warm your gravy according to package instructions, stirring occasionally.
  4. If using frozen corn, cook it according to package instructions. For canned corn, drain and heat in a small saucepan.
  5. Reheat or prepare your mashed potatoes until velvety and hot.
  6. To assemble, add a scoop of mashed potatoes to each bowl, top with corn, then add the chicken. Drizzle with gravy and sprinkle with shredded cheddar cheese. Garnish with parsley if desired.
  7. Serve immediately and enjoy!
