- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- 4 cups mashed potatoes (store-bought or homemade)
- 1 cup corn kernels (canned or frozen)
- 1 cup shredded cheddar cheese
- 1 cup prepared gravy (chicken or brown)
- Chopped fresh parsley for garnish (optional)
Instructions
- In a medium bowl, combine the chicken pieces with garlic powder, onion powder, paprika, salt, and pepper. Mix until well-coated.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and brown for 7-9 minutes. Once cooked, keep it warm and set aside.
- In a medium saucepan, gently warm your gravy according to package instructions, stirring occasionally.
- If using frozen corn, cook it according to package instructions. For canned corn, drain and heat in a small saucepan.
- Reheat or prepare your mashed potatoes until velvety and hot.
- To assemble, add a scoop of mashed potatoes to each bowl, top with corn, then add the chicken. Drizzle with gravy and sprinkle with shredded cheddar cheese. Garnish with parsley if desired.
- Serve immediately and enjoy!
