Ingredients

- 1 lb lean ground beef
- 1 can black beans, drained and rinsed
- 1 cup corn, canned or frozen
- 2 cups ready rice
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 packet taco seasoning
- 1 cup water
- Salt and pepper to taste
- Optional toppings: sour cream, salsa, jalapeños, cilantro
Instructions
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- Stir in the taco seasoning and water, cooking for another 2-3 minutes until combined.
- Add the black beans, corn, and ready rice to the skillet. Mix well.
- Sprinkle cheese on top and cover the skillet, letting it cook for another 3-5 minutes until the cheese is melted.
- Serve hot, topped with optional toppings if desired.
