Description

A quick and easy one-pan meal combining the flavors of Mexico, featuring gooey cheese, spiced beef, and nutritious beans.


Ingredients

  • 1 lb lean ground beef
  • 1 can black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 2 cups ready rice
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • 1 cup water
  • Salt and pepper to taste
  • Optional toppings: sour cream, salsa, jalapeños, cilantro

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Stir in the taco seasoning and water, cooking for another 2-3 minutes until combined.
  3. Add the black beans, corn, and ready rice to the skillet. Mix well.
  4. Sprinkle cheese on top and cover the skillet, letting it cook for another 3-5 minutes until the cheese is melted.
  5. Serve hot, topped with optional toppings if desired.
