Description

Ingredients

  • 2 cups elbow macaroni (or cavatappi/rotini)
  • 2 cups shredded cheese (cheddar or a blend)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes (drained if desired)
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups beef broth (vegetable broth for vegetarian option)
  • 1 tablespoon olive oil (or butter)

Instructions

  1. Sauté onion and garlic in a large skillet with olive oil over medium heat until fragrant, about 3-4 minutes.
  2. Brown the ground beef, breaking it apart until rich brown. Drain excess fat.
  3. Add diced tomatoes, paprika, salt, and pepper. Stir in beef broth and bring to a boil.
  4. Cook elbow macaroni in the boiling mixture for 10-12 minutes or until tender, stirring occasionally.
  5. Melt cheese into the mixture off heat until creamy. Serve warm and enjoy!

Notes

Make ahead up to two days in advance and reheat on stovetop. For crunch, bake with breadcrumbs at 350°F for 20 minutes.
