Description

Delicious and satisfying cheddar egg quesadillas, perfect for breakfast or a quick meal. Crispy tortillas filled with fluffy scrambled eggs and sharp cheddar cheese.


Ingredients

  • 4 Large Flour Tortillas (810 inch)
  • 8 Large Eggs
  • 2 Tablespoons Milk or Heavy Cream
  • 2 Cups Shredded Sharp Cheddar Cheese
  • 2 Tablespoons Unsalted Butter
  • ½ Teaspoon Salt
  • ¼ Teaspoon Black Pepper

Instructions

  1. Whisk the Eggs: In a mixing bowl, crack all 8 eggs. Pour in the milk, salt, and black pepper. Whisk until light and frothy.
  2. Cook the Eggs: Heat a non-stick skillet over medium-low heat, melt 1 tablespoon of butter, and pour in the eggs. Cook gently, stirring until set but glossy.
  3. Prep the Quesadilla: Wipe the skillet, melt ½ tablespoon of butter, and lay one tortilla flat. Sprinkle ½ cup of cheese on top.
  4. Assemble It: Spoon half of the scrambled eggs onto one half of the tortilla, fold it over and press to seal.
  5. Toast the Quesadilla: Cook for 2-3 minutes on each side until golden brown and the cheese is melted.
  6. Serve: Allow to rest, slice into wedges, and serve warm.
