- 4 Large Flour Tortillas (8–10 inch)
- 8 Large Eggs
- 2 Tablespoons Milk or Heavy Cream
- 2 Cups Shredded Sharp Cheddar Cheese
- 2 Tablespoons Unsalted Butter
- ½ Teaspoon Salt
- ¼ Teaspoon Black Pepper
Instructions
- Whisk the Eggs: In a mixing bowl, crack all 8 eggs. Pour in the milk, salt, and black pepper. Whisk until light and frothy.
- Cook the Eggs: Heat a non-stick skillet over medium-low heat, melt 1 tablespoon of butter, and pour in the eggs. Cook gently, stirring until set but glossy.
- Prep the Quesadilla: Wipe the skillet, melt ½ tablespoon of butter, and lay one tortilla flat. Sprinkle ½ cup of cheese on top.
- Assemble It: Spoon half of the scrambled eggs onto one half of the tortilla, fold it over and press to seal.
- Toast the Quesadilla: Cook for 2-3 minutes on each side until golden brown and the cheese is melted.
- Serve: Allow to rest, slice into wedges, and serve warm.
