A delightful Cardamom Coffee Cake with a tender crumb and crunchy streusel topping, perfect for breakfast or any gathering.

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 2 large eggs
- 2 teaspoons baking powder
- 1 teaspoon ground cardamom
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts (optional)
- For the Streusel: 1/2 cup brown sugar
- 1/4 cup all-purpose flour
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Cream together the butter, granulated sugar, and brown sugar in a large bowl until light and fluffy, about 3-5 minutes.
- Beat in the eggs one at a time, mixing well after each addition, and then stir in the vanilla extract.
- In another bowl, combine the flour, baking powder, cardamom, and salt. Mix until well blended.
- Gradually add the flour mixture alternately with the milk to the creamed mixture, starting and ending with the flour.
- In a small bowl, prepare the streusel by mixing brown sugar, flour, and cinnamon.
- Pour half of the cake batter into the prepared pan, sprinkle half of the streusel on top, add the remaining batter, and finish with the remaining streusel.
- Bake in the preheated oven for about 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool for a few minutes before serving.
Notes
For a dairy-free version, substitute almond or oat milk and coconut oil for butter. Make-ahead: You can prepare the batter in advance and store it in the refrigerator overnight.
