Description

A delightful Cardamom Coffee Cake with a tender crumb and crunchy streusel topping, perfect for breakfast or any gathering.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)
  • For the Streusel: 1/2 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Cream together the butter, granulated sugar, and brown sugar in a large bowl until light and fluffy, about 3-5 minutes.
  3. Beat in the eggs one at a time, mixing well after each addition, and then stir in the vanilla extract.
  4. In another bowl, combine the flour, baking powder, cardamom, and salt. Mix until well blended.
  5. Gradually add the flour mixture alternately with the milk to the creamed mixture, starting and ending with the flour.
  6. In a small bowl, prepare the streusel by mixing brown sugar, flour, and cinnamon.
  7. Pour half of the cake batter into the prepared pan, sprinkle half of the streusel on top, add the remaining batter, and finish with the remaining streusel.
  8. Bake in the preheated oven for about 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool for a few minutes before serving.

Notes

For a dairy-free version, substitute almond or oat milk and coconut oil for butter. Make-ahead: You can prepare the batter in advance and store it in the refrigerator overnight.
