- ½ teaspoon black pepper
- 2 bell peppers (red, green, or yellow), sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon olive oil (for sautéing)
- Fresh parsley or cilantro, chopped (optional, for garnish)
Instructions
- Mix Cajun seasoning, garlic powder, onion powder, paprika, thyme, salt, and pepper in a small bowl. Coat the chicken breasts with the spice blend.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sauté the chicken for 6-7 minutes on each side until golden brown and cooked through. Remove the chicken and let it rest.
- In the same skillet, add 1 tablespoon of olive oil and sauté the sliced bell peppers and onions over medium heat for 5-6 minutes. Add minced garlic and cook for an additional minute.
- Slice the rested chicken, return it to the skillet, and toss with the sautéed vegetables over low heat for 2-3 minutes to meld the flavors.
- Garnish with fresh parsley or cilantro before serving.
Notes
Make-ahead: Prepare the spice mix in advance. You can also marinate the chicken overnight for enhanced flavor. Substitute chicken with shrimp or tofu if desired.
