Description

Ingredients

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • Garlic powder
  • Onion powder
  • Smoked paprika
  • Salt
  • Black pepper
  • 1/3 cup hot sauce
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon honey (optional)
  • 2 cups cooked white or brown rice
  • Fresh vegetables: shredded romaine lettuce, cherry tomatoes, shredded carrots, cucumber, and red onion
  • Ranch dressing and blue cheese
  • Parsley (optional)

Instructions

  1. Prep the chicken by combining with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper in a medium bowl.
  2. Cook the chicken in a large skillet over medium-high heat for 5 to 7 minutes until golden brown and cooked through.
  3. Make the sauce by whisking together hot sauce, melted butter, and honey (if using) in a small bowl.
  4. Combine the cooked chicken with the sauce, tossing until completely coated.
  5. Assemble the bowls by dividing warm rice among them, then adding romaine lettuce, cherry tomatoes, carrots, cucumbers, and red onion.
  6. Top with the Buffalo chicken mixture, drizzle with ranch dressing, and sprinkle blue cheese on top. Garnish with parsley if desired.
