- 1 pound ground pork sausage
- 8 slices thick-cut bacon
- 8 large eggs, beaten
- 1 tablespoon unsalted butter
- 4 slices of bread
- 1 avocado, sliced
- 4 slices of cheese (e.g., cheddar or Swiss)
Instructions
- In a large skillet, cook the bacon over medium heat until crispy, about 7-10 minutes. Remove and set aside on paper towel to drain.
- Using the remaining bacon fat, add the ground sausage and cook until browned, about 5-6 minutes. Set aside.
- Melt butter in another pan over medium-low heat. Pour in beaten eggs and scramble until just set, around 3-4 minutes.
- Toast the bread slices to a golden brown in a toaster or on a grill.
- On one slice of toast, layer the cooked sausage, bacon, scrambled eggs, cheese, and avocado slices.
- Top with another slice of toast. Repeat for a second sandwich if desired.
- Serve warm and enjoy!
