Description

A delightful dessert that combines the classic flavors of banana pudding and cheesecake with a crunchy pecan topping.


Ingredients

  • 30 g unsalted butter, melted
  • 30 g chopped pecans
  • 100 g crushed vanilla wafers
  • 60 g unsalted butter, melted
  • 1 cup cream cheese
  • 1 cup ripe bananas, mashed
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the crushed vanilla wafers and melted butter until well combined. Press this mixture into the bottom of a greased 9-inch springform pan.
  3. In another bowl, beat the cream cheese until smooth. Add in the mashed bananas, powdered sugar, and vanilla extract, mixing until well combined.
  4. Gently fold in the whipped cream.
  5. Pour the filling over the prepared crust and smooth the top.
  6. Mix the chopped pecans with 60 g of melted butter and sprinkle over the filling.
  7. Bake for 25-30 minutes until set.
  8. Let cool completely before refrigerating for at least 4 hours.

Notes

This dessert can be made ahead; it keeps well in the fridge for up to a week or frozen for longer storage.
