Description

Enjoy a comforting bowl of creamy, luscious banana bread overnight oats, perfect for breakfast or as a snack.


Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup milk (dairy or unsweetened plant-based)
  • 1/2 cup plain Greek yogurt (or non-dairy alternative)
  • 1 ripe banana, mashed
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon pure vanilla extract
  • A pinch of salt
  • 1/4 cup chopped walnuts
  • 1 small banana, sliced
  • Additional maple syrup or honey for drizzling (optional)
  • A pinch of ground cinnamon (optional)

Instructions

  1. In a medium bowl or jar, combine oats, milk, Greek yogurt, mashed banana, maple syrup, ground cinnamon, vanilla extract, and salt. Stir until well mixed.
  2. Divide the mixture evenly between two jars or containers.
  3. Seal containers and refrigerate for at least 6 hours or overnight.
  4. In the morning, stir the oats and adjust consistency with milk if needed.
  5. Top with chopped walnuts, banana slices, and drizzle with maple syrup or honey if desired.
  6. Enjoy chilled or at room temperature!

Notes

Prepare in batches for a week’s worth of breakfasts. You can also enjoy the oats warm by heating them gently in the microwave after soaking.
