- 1 cup old-fashioned rolled oats
- 1 cup milk (dairy or unsweetened plant-based)
- 1/2 cup plain Greek yogurt (or non-dairy alternative)
- 1 ripe banana, mashed
- 1 tablespoon maple syrup or honey
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon pure vanilla extract
- A pinch of salt
- 1/4 cup chopped walnuts
- 1 small banana, sliced
- Additional maple syrup or honey for drizzling (optional)
- A pinch of ground cinnamon (optional)
Instructions
- In a medium bowl or jar, combine oats, milk, Greek yogurt, mashed banana, maple syrup, ground cinnamon, vanilla extract, and salt. Stir until well mixed.
- Divide the mixture evenly between two jars or containers.
- Seal containers and refrigerate for at least 6 hours or overnight.
- In the morning, stir the oats and adjust consistency with milk if needed.
- Top with chopped walnuts, banana slices, and drizzle with maple syrup or honey if desired.
- Enjoy chilled or at room temperature!
Notes
Prepare in batches for a week’s worth of breakfasts. You can also enjoy the oats warm by heating them gently in the microwave after soaking.
