- 1/4 cup (50 grams) honey (for topping)
- 24 ounces (675 grams) cream cheese
- 1/3 cup (125 grams) honey (for filling)
- 2 large eggs
- 1 egg yolk
- 1/2 cup (120 grams) sour cream (15-20% fat)
- 1/4 teaspoon salt (for filling)
Instructions
- Preheat the oven to 350°F (175°C).
- Make the crust: In a mixing bowl, blend softened butter, powdered sugar, and salt until creamy and well combined. Gradually mix in flour and chopped pistachios until a soft dough forms. Press the dough evenly into the bottom of a greased 9-inch springform pan and bake for 10-12 minutes or until lightly golden. Let it cool.
- Prepare the baklava topping: Layer filo sheets onto a baking sheet, brushing each with melted butter. Sprinkle chopped pistachios mixed with sugar over each layer, drizzling with lemon juice, water, and honey. Bake for about 20 minutes until golden brown.
- Make the cheesecake filling: In a large bowl, beat cream cheese until smooth and fluffy. Gradually mix in honey, eggs, egg yolk, sour cream, and salt until just combined.
- Assemble the cheesecake: Pour the cream cheese filling over the cooled crust and top with baklava pieces, pressing them slightly into the filling.
- Bake the cheesecake: Bake for 40-45 minutes, or until the filling is set and slightly jiggly in the center. Allow it to cool completely at room temperature before refrigerating for at least four hours.
