Description

A creamy and rich Bacon Cheddar Gnocchi Soup with crispy bacon, tender gnocchi, and a delightful blend of flavors that warms the soul.


Ingredients

  • 810 slices bacon, cooked and chopped
  • 1 tbsp butter or olive oil
  • 1 large onion, diced
  • 2 large carrots, peeled and sliced
  • 4 cups chicken broth
  • 16 oz gnocchi
  • 2 cups heavy cream or half-and-half
  • 2 cups shredded cheddar cheese

Instructions

  1. Cook the bacon in a large pot over medium heat until crispy. Drain on paper towels, then chop and set aside.
  2. In the same pot, keep about 1 tablespoon of the rendered bacon fat (or use butter or olive oil). Add the diced onions and carrot slices. Sauté for 5-7 minutes until tender and fragrant.
  3. Pour in the chicken broth and stir. Bring the mixture to a gentle simmer.
  4. Slowly pour in the heavy cream, stirring gently. Season with salt and pepper. Gradually add the shredded cheddar cheese, allowing it to melt.
  5. Add the gnocchi to the pot and cook for around 2 minutes until they float and become tender.
  6. Gently fold in the chopped bacon. Taste and adjust seasoning if necessary. Serve hot, garnished with extra cheese if desired.

Notes

Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 3 months.
