A creamy and rich Bacon Cheddar Gnocchi Soup with crispy bacon, tender gnocchi, and a delightful blend of flavors that warms the soul.

- 8–10 slices bacon, cooked and chopped
- 1 tbsp butter or olive oil
- 1 large onion, diced
- 2 large carrots, peeled and sliced
- 4 cups chicken broth
- 16 oz gnocchi
- 2 cups heavy cream or half-and-half
- 2 cups shredded cheddar cheese
Instructions
- Cook the bacon in a large pot over medium heat until crispy. Drain on paper towels, then chop and set aside.
- In the same pot, keep about 1 tablespoon of the rendered bacon fat (or use butter or olive oil). Add the diced onions and carrot slices. Sauté for 5-7 minutes until tender and fragrant.
- Pour in the chicken broth and stir. Bring the mixture to a gentle simmer.
- Slowly pour in the heavy cream, stirring gently. Season with salt and pepper. Gradually add the shredded cheddar cheese, allowing it to melt.
- Add the gnocchi to the pot and cook for around 2 minutes until they float and become tender.
- Gently fold in the chopped bacon. Taste and adjust seasoning if necessary. Serve hot, garnished with extra cheese if desired.
Notes
Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 3 months.
