Description

A comforting dish of tender beef rolls filled with pecorino cheese, raisins, and pine nuts, simmered in a rich tomato sauce.


Ingredients

  • 1 lb beef (flank or sirloin), pounded
  • 1/2 cup pecorino cheese, grated
  • 1/4 cup pine nuts
  • 1/4 cup raisins
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups tomato sauce
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare the Beef Rolls: Pound each piece of beef to about 1/4 inch thick.
  2. Mix the Filling: Blend together the pecorino cheese, pine nuts, raisins, salt, and pepper in a mixing bowl.
  3. Fill and Roll: Take a spoonful of the filling and place it at one end of each beef roll, then roll tightly and secure with toothpicks.
  4. Brown the Rolls: Heat olive oil in a skillet and brown the beef rolls on all sides.
  5. Add Aromatics: Stir in garlic and parsley until fragrant.
  6. Pour in the Sauce: Add the tomato sauce, ensuring each roll is covered.
  7. Simmer: Cover and simmer on low heat for about 2 hours.
  8. Serve: Plate the braciole with sauce drizzled over each roll.

Make-ahead: Prepare rolls a day in advance. For a quicker method, use an air fryer.
