Instructions
- Prepare the Beef Rolls: Pound each piece of beef to about 1/4 inch thick.
- Mix the Filling: Blend together the pecorino cheese, pine nuts, raisins, salt, and pepper in a mixing bowl.
- Fill and Roll: Take a spoonful of the filling and place it at one end of each beef roll, then roll tightly and secure with toothpicks.
- Brown the Rolls: Heat olive oil in a skillet and brown the beef rolls on all sides.
- Add Aromatics: Stir in garlic and parsley until fragrant.
- Pour in the Sauce: Add the tomato sauce, ensuring each roll is covered.
- Simmer: Cover and simmer on low heat for about 2 hours.
- Serve: Plate the braciole with sauce drizzled over each roll.
